  • 100g unbleached wheat flour or almond meal or rice flour —- we usually use half almond flour and half ordinary flour
  • 100g sugar
  • 1/4 tsp bicarb
  • 90ml extra virgin olive oil
  • 2 tsp grated lemon zest
  • 3 drops lemon oil
  • a squeeze of lemon juice

  1. Preheat the oven to 180 degrees, and line 2-3 baking trays with baking paper.
  2. Mix together the flour, sugar and bicarb.
  3. Add the liquids (or you can mix these first separately).
  4. Roll the dough with your hands into linen balls.
  5. Bake for 15 minutes.
